Easy Spanish Rice using Salsa




We love rice in this house. Rice is so versatile! Whether you're having Chinese, Mexican, Thia, Swedish, or making an easy chicken and rice crockpot bake... rice is a must have! My family loves this easy Spanish rice recipe with tacos, burritos, or fajitas. The best part... it is super simple! You can easily use watever ingredients you have available in your pantry!


Here's what you'll need:

- 2 tbs oil (I use anything I have on hand)
- 2 T chopped onion or 1 T dried onion flakes
- 1 1/2 c uncooked white rice
- 2 cubes or 2 tsp chicken bouillon
- 2 cups hot water
- 1 cup salsa of any kind! (preferably chunky) 

* our favorite salsa to use with this recipe is the Kirkland Signiture Organic.

1 - Heat oil in pan or skillet on medium heat. Add onion and cook until tender, about 5 minutes. (If you're using dry onion flakes, don't add to oil until you add the rice.)

2 - Pour rice into pan and mix with onion and oil. 

3 - Once rice starts to brown, add chicken bullion and stir. 

4- Immediately add water and salsa. Mix, then reduce heat. Cover and simmer 20 minutes until rice is tender and water is absorbed.
